Hello marmite, welcome to the forum!
I've had a go at growing ginger a couple of times, by planting the roots as that was what Madhur Jaffrey recommended as a way of keeping it, rather than putting it in the fridge.
I planted it in a sandy compost mix and then put the pots outside over the summer in a sheltered and partly shaded spot. It wasn't fast growing but by the end of the summer the roots had grown quite a lot. It didn't put on a lot of foliage, but I wasn't really interested in that. We had some lovely fresh ginger root from it and were well pleased.
I think if you're wanting it to flower then it needs a lot of heat so a conservatory or greenhouse might be the way to go.
